- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¾ cup granulated sugar, divided
- 16 oz cream cheese, softened
- 1 cup sour cream
- 3 large eggs
- 4 cups apples (about 4 medium), peeled and sliced
- 2 tsp cinnamon, divided
- ½ cup brown sugar
Instructions
- Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup granulated sugar. Press into the bottom of a springform pan.
- In another bowl, beat cream cheese until smooth. Add sour cream, remaining granulated sugar, eggs one at a time, and 1 tsp cinnamon. Mix until creamy.
- Toss sliced apples with brown sugar and remaining cinnamon in a separate bowl.
- Pour half of the cheesecake filling over the crust. Layer spiced apples on top followed by the remaining filling.
- Bake for about 55-60 minutes until set but slightly jiggly in the center. Let cool in the oven with the door ajar for an hour before refrigerating for at least four hours.
- Slice and serve with whipped cream if desired.
