  • 8 oz flat rice noodles
  • 1 lb boneless chicken thighs (or tofu for vegetarian option)
  • 1 cup fresh bean sprouts
  • 4 green onions, chopped
  • 1/2 cup creamy peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp brown sugar
  • 1 tsp sriracha (optional)
  • Cooking oil for sautéing

Instructions

  1. Soak the rice noodles in hot water for about 15 minutes until soft but not mushy. Drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, lime juice, brown sugar, and sriracha until smooth.
  3. Heat oil in a large skillet or wok over medium-high heat. Cook chicken thighs (or tofu) until browned and cooked through, about 5-7 minutes. Remove from heat and slice into bite-sized pieces.
  4. Add more oil to the skillet, then stir in soaked noodles and chopped green onions. Pour the peanut sauce over the ingredients and toss everything together over medium heat until well combined.
  5. Gently fold in fresh bean sprouts and cook for an additional minute.
