  • 4 meaty chicken legs (skin-on)
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme or oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Pat chicken legs dry and season generously with salt, pepper, garlic powder, and herbs.
  3. In a skillet over medium-high heat, sear chicken in olive oil for 4-5 minutes on each side until golden brown.
