With the sweetness of ripe bananas and a hint of cinnamon, these cookies evoke warm memories of home-baked goodness. Simple to prepare and made with everyday ingredients, they are an ideal way to use overripe bananas while satisfying your sweet tooth.

Ingredients

Scale
  • 2 ripe bananas (mashed)
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar (packed)
  • 1/3 cup unsalted butter (softened)
  • 1 large egg
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mash the ripe bananas until smooth.
  3. In another bowl, cream together softened butter and brown sugar until fluffy. Add in the mashed bananas.
  4. Mix in the egg and stir well.
  5. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt; then gradually mix into the wet ingredients until just combined.
