- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 2 tbsp extra virgin olive oil
- 1 cup low-sodium chicken broth
- 2 tbsp low-sodium soy sauce
- 1 cup long-grain white rice
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Gather and prepare all ingredients. Trim excess fat off chicken breasts and mince garlic.
- In a medium saucepan, bring 2 cups of water to a boil. Add rice and a pinch of salt. Reduce heat to low, cover, and simmer for about 18 minutes until fluffy.
- In a large skillet over medium-high heat, melt 2 tbsp butter with 2 tbsp olive oil. Season chicken with salt and pepper, then sear for about 6 minutes per side until golden brown and cooked through.
- Remove chicken from skillet and set aside. In the same skillet, add remaining butter and minced garlic; sauté until fragrant (about 1 minute). Stir in chicken broth and soy sauce.
- Return chicken to skillet; simmer in sauce for an additional 3 minutes.
- Fluff rice with a fork and mix in Parmesan cheese and parsley. Serve rice topped with chicken scampi and drizzle with sauce.
