- 3 tbsp Dijon mustard
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 large russet potatoes (about 1 lb), peeled and cubed
- 4 tbsp butter
- Salt and pepper to taste
- Optional: 2 tbsp low-sodium soy sauce
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a baking dish.
