Description

Ingredients

  • 2 ripe avocados (about 400g)
  • 2 medium cucumbers (about 300g)
  • 1/4 cup fresh lime juice (60ml)
  • 2 cups low-sodium vegetable broth (480ml)
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Halve the avocados and remove the pits. Scoop the flesh into a blender. Peel and chop the cucumbers into small pieces.
  2. Add chopped cucumbers, lime juice, garlic, vegetable broth, salt, and pepper to the blender with the avocado. Blend until smooth.
  3. Taste and adjust seasoning if necessary; add more lime juice or salt as desired.
  4. Transfer the mixture to a bowl or pitcher, cover it, and refrigerate for at least one hour to meld flavors.
