Description

Creamy Spinach Tomato Tortellini is a comforting dish that combines tender cheese tortellini with a luscious sauce of fresh spinach, juicy tomatoes, and aromatic garlic. Ideal for cozy evenings or family gatherings, this recipe delivers vibrant flavors and creamy goodness in just 30 minutes.

Ingredients

Scale
  • 9 oz cheese tortellini (fresh or frozen)
  • 2 cups baby spinach
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot and cook the tortellini according to package instructions until they float (about 3-5 minutes). Drain and set aside.
  2. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant (about 1 minute).
  3. Add canned tomatoes (with juice) and spinach; simmer until spinach wilts (about 2 minutes).
  4. Stir in heavy cream, Italian seasoning, salt, and pepper; let simmer for 5 minutes until slightly thickened.
  5. Toss in the cooked tortellini and Parmesan cheese until well coated. Serve with additional Parmesan if desired.
