  • 2 cups cooked rice
  • 1 tablespoon olive oil (for crisping)
  • 1 cup bell peppers (diced)
  • 1 cup cucumbers (sliced)
  • 1 cup carrots (julienned)
  • 1 cup grilled chicken or tofu (cooked)
  • 1/4 cup fresh cilantro or parsley (chopped)
  • 2 tablespoons lime juice (freshly squeezed)
  • 3 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Spread cooked rice on a baking sheet, drizzle with olive oil, and bake for 15-20 minutes until golden brown.
  2. While the rice crisps, prepare the vegetables by dicing bell peppers, slicing cucumbers, and julienning carrots.
