- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 cups low-sodium chicken broth
- 1 medium onion, chopped
- 3 cloves fresh garlic, minced
- 6 medium green tomatillos, husked and quartered
- 1 cup fresh cilantro, chopped
- 1/4 cup freshly squeezed lime juice (about 2 limes)
- Salt and pepper to taste
Instructions
- Wash all vegetables and chop the onion and garlic.
- In a blender, combine tomatillos, cilantro, lime juice, garlic, and half of the onion; blend until smooth.
- Place chicken breasts at the bottom of the crockpot. Pour the green sauce over them along with the remaining onion and chicken broth.

- Remove chicken, shred it with two forks, return it to the pot, and mix well.
