Description

Cucumber sandwiches are an ideal refreshment for sweltering summer days. These light and creamy delights feature crisp cucumber slices nestled between hearty whole grain bread, making them a perfect snack for picnics, garden parties, or leisurely afternoons. With their vibrant colors and fresh flavors, these sandwiches promise to elevate any gathering while keeping you cool and satisfied.


Ingredients

  • 2 fresh cucumbers (sliced thinly)
  • 8 oz cream cheese (softened)
  • 2 tbsp fresh dill (chopped)
  • 8 slices whole grain bread
  • Salt & pepper (to taste)
  • Optional: 4 sliced radishes or 4 oz smoked salmon

Instructions

  1. Wash and thinly slice the cucumbers to about an eighth of an inch thick.
  2. In a bowl, mix cream cheese with chopped dill, salt, and pepper until smooth.
  3. Spread the dill-infused cream cheese on one side of two slices of bread.
  4. Arrange cucumber slices evenly on one slice and top with the second slice.
  5. Optionally, cut off crusts; slice into quarters or triangles.
  6. Chill for 15-30 minutes before serving to enhance freshness.
