Description

Cucumber Sorbet is the ultimate summer refreshment, combining the crisp, invigorating taste of fresh cucumbers with a hint of sweetness and mint. Ingredients

  • 4 cups fresh cucumbers, peeled and chopped (about 3 medium cucumbers)
  • 1 cup granulated sugar
  • 1/2 cup freshly squeezed lemon juice (about 2 large lemons)
  • 1/4 cup fresh mint leaves
  • 1/2 cup filtered water

Instructions

  1. Wash and chop the cucumbers into small pieces.
  2. In a blender, combine cucumbers, sugar, lemon juice, mint leaves, and water. Blend until smooth.
  3. Strain the mixture through a fine mesh sieve into a bowl to remove pulp.
  4. Chill the mixture in the refrigerator for one hour.
  5. Pour into an ice cream maker and churn according to the manufacturer’s instructions. Alternatively, pour into a shallow dish and freeze for about four hours, scraping every 30 minutes until fluffy.
  6. Serve in bowls or glasses garnished with mint leaves.
