- 4 cups fresh cucumbers, peeled and chopped (about 3 medium cucumbers)
- 1 cup granulated sugar
- 1/2 cup freshly squeezed lemon juice (about 2 large lemons)
- 1/4 cup fresh mint leaves
- 1/2 cup filtered water
Instructions
- Wash and chop the cucumbers into small pieces.
- In a blender, combine cucumbers, sugar, lemon juice, mint leaves, and water. Blend until smooth.
- Strain the mixture through a fine mesh sieve into a bowl to remove pulp.
- Chill the mixture in the refrigerator for one hour.
- Pour into an ice cream maker and churn according to the manufacturer’s instructions. Alternatively, pour into a shallow dish and freeze for about four hours, scraping every 30 minutes until fluffy.
- Serve in bowls or glasses garnished with mint leaves.
