- 4 cups fresh peaches, sliced
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/2 cup unsalted butter, cold and cubed
- 1/4 tsp salt
- 3–5 tbsp iced water
Instructions
- Preheat your oven to 425°F (220°C).
- In a bowl, mix flour, granulated sugar, brown sugar, and salt. Add the cold butter and mix until crumbly.
- Gradually add iced water until the dough holds together. Chill for 30 minutes.
- Toss sliced peaches with remaining sugars in a bowl.
- Roll out chilled dough on a floured surface into a rough circle and transfer to parchment-lined baking sheet.
- Place peaches in the center of the dough, fold edges over the filling, brush with melted butter, and sprinkle sugar on top.
- Bake for 25-30 minutes until golden brown.
