- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 1/2 lb medium shrimp, peeled and deveined
- 1 cup panko breadcrumbs
- 2 tbsp olive oil

Instructions
- Boil the eggs in cold water over medium heat until gently boiling. Cover and turn off the heat; let sit for 10-12 minutes. Transfer to an ice bath to cool.
- While cooling, season shrimp with salt and pepper, then heat olive oil in a skillet over medium-high heat.
- Dredge shrimp in panko breadcrumbs and fry until golden brown, about 2-3 minutes per side. Drain on paper towels.
- Peel cooled eggs, halve them lengthwise, and remove yolks into a bowl. Mix yolks with mayonnaise, mustard, salt, and pepper until smooth.
- Spoon or pipe the yolk mixture back into egg whites and top each with a fried shrimp.
- Serve immediately or chill briefly before serving.
