Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 2 cloves fresh garlic, minced
  • 1-inch piece fresh ginger, grated
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp rice vinegar
  • 2 tbsp cornstarch
  • Oil for frying (about 1 cup)

Instructions

  1. 1. Marinate the chicken: In a bowl, mix soy sauce, cornstarch, and eggs until smooth. Add chicken pieces and marinate for at least 30 minutes.
  2. 2. Prepare the coating: In another bowl, season flour with salt and pepper. Dredge marinated chicken in flour until evenly coated.
  3. 3. Fry the chicken: Heat oil in a deep pan over medium-high heat. Fry chicken in batches until golden brown (about 3 minutes per side). Drain on paper towels.
  4. 4. Make the sauce: In a saucepan over medium heat, combine brown sugar, rice vinegar, garlic, ginger, and soy sauce. Simmer until thickened.
  5. 5. Combine: Toss fried chicken in the sauce until well-coated. Serve hot over rice or with vegetables.
