  • 4 cups ripe seedless watermelon, cut into 1-inch thick slabs
  • 1/2 cup high-quality balsamic vinegar
  • 2 tbsp honey or maple syrup
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • Fresh mint leaves for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Slice the watermelon into thick slabs, about 1 inch each.
  3. In a small saucepan, combine balsamic vinegar and honey (or maple syrup). Simmer over medium heat for about 5 minutes until it thickens slightly.
  4. Season both sides of the watermelon slabs with salt and pepper.
