  • 1 lb ground turkey
  • 2 medium sweet potatoes (about 2 cups), peeled and cubed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, cook the ground turkey until browned. Add the diced onion and minced garlic halfway through cooking.
  3. Boil sweet potato cubes in water for about 10 minutes until fork-tender; then drain.
