- 1/2 cup coconut oil (melted)
- 1 cup sugar (1/2 cup brown sugar + 1/2 cup white sugar)
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup crushed pineapple (drained)
- 1/2 cup shredded coconut (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mash the ripe bananas in a bowl until smooth.
- Mix melted coconut oil and sugars into the mashed bananas; add eggs and stir until fluffy.
- In another bowl, whisk together flour, baking soda, and salt; gradually combine with the wet mixture until just mixed.
- Fold in crushed pineapple and shredded coconut.
- Pour batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
- Cool for 10 minutes in the pan before transferring to a wire rack.
