- 1/2 cup granulated sugar (for crust)
- 1/2 cup unsalted butter (softened)
- 3 large eggs
- 1 cup granulated sugar (for filling)
- 1/2 cup fresh lemon juice (about 2 lemons)
- Zest of 2 lemons
- 2 tsp dried culinary lavender
- 1 tsp baking powder
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
- In a bowl, combine flour and 1/2 cup sugar. Cut in softened butter until the mixture resembles coarse crumbs. Press into the bottom of the prepared dish and bake for about 15 minutes or until lightly golden.
- While the crust bakes, whisk together eggs, remaining sugar, lemon juice, lemon zest, lavender, and baking powder in another bowl until well combined.
- Once the crust is slightly cooled, pour the lemon-lavender mixture over it evenly.
- Return to the oven and bake for an additional 20-25 minutes or until set.
- Allow to cool completely before slicing into squares. Dust with powdered sugar if desired.
