  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/4 cup freshly squeezed lime juice
  • 2 tbsp honey
  • 1/4 cup low-sodium soy sauce
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 cups cooked brown rice or quinoa
  • Steamed broccoli or mixed salad for serving

Instructions

  1. 1. Preheat the oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. 2. Season chicken breasts with salt and pepper. In a bowl, mix lime juice, honey, garlic, soy sauce, and cumin to create the marinade.
  3. 3. Marinate the chicken for at least 30 minutes in a resealable bag or shallow dish.
  4. 4. Arrange marinated chicken in the baking dish and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
