Description

Ingredients

  • 1 cup green or brown lentils
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ medium red onion, finely diced
  • ½ cup feta cheese, crumbled (or vegan cheese)
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons lemon juice (freshly squeezed)
  • 5 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water. In a pot, combine lentils with 3 cups of water. Bring to a boil, then simmer for 20-25 minutes until tender but firm. Drain excess liquid.
  2. While lentils cook, chop the cucumber, halve the cherry tomatoes, and finely dice the red onion. Chop parsley.
  3. In a small bowl, whisk together lemon juice and olive oil with salt and pepper.
  4. In a large bowl, combine cooked lentils, chopped veggies, and feta cheese. Drizzle dressing over the mixture and toss gently.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
