- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 2 cups shredded Monterey Jack cheese
- 2 cups shredded Cheddar cheese
- 4 large flour tortillas
- 2 tbsp olive oil
Instructions
- Season chicken breasts with salt, pepper, and minced garlic. Heat olive oil in a skillet over medium-high heat. Cook chicken for about 6-7 minutes per side until golden brown and cooked through.
- Shred the cooked chicken using two forks once cool enough to handle.
- On half of each tortilla, sprinkle a generous layer of Monterey Jack and Cheddar cheese, followed by shredded chicken. Fold the tortilla over.
- In the same skillet, add more olive oil if needed and cook each quesadilla for about 3-4 minutes on each side until golden brown and melty inside.
- Allow to rest briefly before slicing into triangles. Serve with sour cream mixed with hot sauce.
