- 1 cup tomato sauce
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 2 cups low-sodium vegetable broth
- 1 tsp ground cumin
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Rinse rice under cold water until the water runs clear to remove excess starch.
- In a large saucepan over medium heat, add olive oil and sauté the chopped onion and minced garlic until fragrant and golden brown (about 3 minutes).
- Add the rinsed rice to the pan, stirring frequently for about 2 minutes until slightly opaque.
- Pour in the tomato sauce and vegetable broth, then season with cumin, salt, and pepper. Stir gently to combine.
- Bring to a gentle boil over medium-high heat. Once boiling, reduce heat to low, cover tightly, and simmer for 18-20 minutes.
- Remove from heat but keep covered for an additional 5 minutes. Fluff with a fork before serving.
