- 3 cloves garlic, minced
- 1 cup oil-packed sun-dried tomatoes, sliced
- 16 oz package store-bought gnocchi
- 2 cups fresh spinach
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp low-sodium soy sauce
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Chop chicken into bite-sized pieces, mince garlic, slice sun-dried tomatoes, and wash spinach.
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; cook until golden brown (5-7 minutes). Remove from skillet.
