  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 cup pumpkin puree
  • 16 oz cream cheese, softened
  • 3 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until crumbly. Press into the bottom of the prepared pan.
  3. Beat cream cheese until smooth; gradually add sugar. Mix in pumpkin puree, eggs, vanilla, and spices until well combined.

  5. Cool at room temperature before refrigerating for at least 2 hours.
