Ingredients

  • 3/4 cup granulated sugar (150g)
  • 1/2 cup water (120ml)
  • 2 tbsp fresh lemon juice (30ml)

Instructions

  1. Rinse raspberries under cold water and pat dry.
  2. In a saucepan, combine water and sugar over medium heat, stirring until dissolved. Let cool.
  3. Blend raspberries with cooled syrup and lemon juice until smooth.
  4. Strain mixture through a fine mesh sieve if desired to remove seeds.
  5. Transfer puree to an airtight container and freeze for at least 4 hours or until firm.
  6. Scoop into bowls and serve, garnished with mint if desired.
