- 1 cup full-fat coconut milk
- 1 cup fresh blueberries
- 4 tablespoons honey or maple syrup (divided)
- 2 tablespoons lemon juice (divided)
Instructions
- Blend the strawberry layer: Combine strawberries, 2 tablespoons of honey, and 1 tablespoon of lemon juice in a blender until smooth.
- Prepare the coconut layer: In a bowl, mix coconut milk with remaining honey to taste.
- Make the blueberry layer: Blend blueberries with 2 tablespoons of honey and remaining lemon juice until smooth.
- Layer in molds: Fill popsicle molds with the strawberry mixture (about one-third full) and freeze for 1 hour. Add coconut layer (half full) and freeze again for another hour. Top with blueberry layer, insert sticks, and freeze overnight until solid.
- Serve: Run warm water over the mold to release popsicles.
