- 1 cup almond flour
- ¾ cup all-purpose flour

- 3–4 tbsp ice water

- In another bowl, mix almond flour, all-purpose flour, and salt. Add chilled butter and mix until crumbly. Gradually add ice water until dough forms.
- Roll out the dough on a floured surface into a rough circle about 12 inches wide.
- Spread the rhubarb mixture in the center of the dough, leaving a 2-inch border. Fold edges over the filling.
- Place on a baking sheet lined with parchment paper and bake for 40-45 minutes until golden brown.
