Instructions
- In a medium saucepan, combine chopped rhubarb and water. Simmer over medium heat for about 10 minutes until the rhubarb softens.
- Stir in agave syrup and simmer for an additional 5 minutes until thickened into a syrup.
- Strain the mixture through a fine-mesh sieve to remove solids.
- In a shaker, mix 3 oz of the strained syrup with 2 oz of lime juice and shake well.
- Fill glasses with ice, pour the rhubarb-lime mixture over ice, and top with sparkling water. Garnish with lime slices or mint leaves.
