Description

Rhubarb margarita mocktail is a vibrant, non-alcoholic drink that perfectly balances the tartness of fresh rhubarb with zesty lime and a touch of sweetness from agave syrup. Ingredients

  • 2 cups fresh rhubarb, chopped
  • 1 cup water
  • 1/2 cup agave syrup
  • 2 oz freshly squeezed lime juice (about 12 limes)
  • Sparkling water (to top off)

Instructions

  1. In a medium saucepan, combine chopped rhubarb and water. Simmer over medium heat for about 10 minutes until the rhubarb softens.
  2. Stir in agave syrup and simmer for an additional 5 minutes until thickened into a syrup.
  3. Strain the mixture through a fine-mesh sieve to remove solids.
  4. In a shaker, mix 3 oz of the strained syrup with 2 oz of lime juice and shake well.
  5. Fill glasses with ice, pour the rhubarb-lime mixture over ice, and top with sparkling water. Garnish with lime slices or mint leaves.
