Ingredients
Scale
- 1 cup jasmine rice
- 3 boneless, skinless chicken breasts (approximately 1.5 lbs)
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 3 tbsp low-sodium soy sauce
- 1 tbsp sesame oil

Instructions
- Rinse the jasmine rice under cold water until clear. Combine it with 2 cups of water in a saucepan and bring to a boil. Reduce heat, cover, and simmer for 15 minutes until tender.
- Season chicken breasts with salt and pepper. Heat oil in a skillet over medium-high heat and sear each breast for about 6 minutes per side until golden brown; let rest before slicing.
- In the same skillet, sauté bell peppers, broccoli, and carrots for 4-5 minutes until tender-crisp.
- Mix soy sauce, sesame oil, and minced garlic in a bowl to create the sauce.
- Fluff the cooked rice with a fork and assemble by topping it with chicken slices and sautéed vegetables. Drizzle the sauce generously on top.
