Description

  • 2 lbs Idaho potatoes, cubed
  • 1 whole head garlic
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh herbs (rosemary or thyme), chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  3. Toss cubed Idaho potatoes with olive oil, salt, pepper, and fresh herbs until evenly coated.
  4. Spread the potatoes on the prepared baking sheet alongside the wrapped garlic. Roast for 25-30 minutes until golden brown and crispy.
