Ingredients
Scale
- 2 fresh jalapenos
- 1/2 cup sharp cheddar cheese, shredded
- 1/4 cup cream cheese, softened
- 4 slices sourdough bread
- 2 tablespoons unsalted butter
Instructions
- Preheat your oven to 400°F (200°C). Place whole jalapenos on a baking sheet lined with parchment paper and roast for about 20 minutes until blistered and soft.
- Once cooled slightly, halve the roasted jalapenos and remove seeds if desired. In a bowl, mix cream cheese and shredded cheddar cheese until smooth, then combine with chopped jalapenos.
- Spread butter on one side of each slice of sourdough. On the unbuttered side, generously spread the cheese-jalapeno mixture before topping with another slice of bread (butter side out).
- Heat a skillet over medium heat and grill the assembled sandwich for about 3-4 minutes per side until golden brown.
- Cut diagonally and serve hot, optionally drizzled with hot sauce or alongside pickles.
