Scale
  • 1 lb baby potatoes
  • 2 tbsp olive oil
  • 1 tsp fresh thyme (or 0.5 tsp dried)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 oz creamy goat cheese
  • ¼ cup sour cream
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Rinse and halve the baby potatoes, then toss them with olive oil, salt, pepper, and thyme in the baking dish until well coated.
  3. Spread the potatoes evenly in the dish and roast for about 25-30 minutes until golden brown and fork-tender, flipping halfway through for even crispiness.
  4. While the potatoes are roasting, whisk together melted goat cheese, sour cream, lemon juice, salt, and pepper in a bowl until smooth.
  5. Once cooked, drizzle the dressing over hot potatoes and gently toss to coat.
  6. Serve immediately on a platter with any extra dressing drizzled on top.
