- 14 oz extra-firm tofu
- 1/2 cup cornstarch
- 1/4 cup white sesame seeds
- 1/4 cup black sesame seeds
- 1 cup jasmine rice
- 1 can (13.5 oz) full-fat coconut milk
- 3 tbsp tahini
- 3 tbsp natural peanut butter
- 2 tbsp low-sodium soy sauce
- Juice of 1 lime
- Water as needed
Instructions
- Press tofu wrapped in a kitchen towel with a weight for 15 minutes to remove excess moisture.
- In a saucepan, combine jasmine rice, coconut milk, and an equal amount of water. Bring to a boil, then simmer covered for 15 minutes until fluffy.
- Cut pressed tofu into cubes. Coat each piece in cornstarch followed by rolling in sesame seeds.
- Bake at 400°F for 25-30 minutes or fry in oil until golden brown.
- Whisk together tahini, peanut butter, soy sauce, lime juice, and water until smooth to create the sauce.
- Serve crispy tofu over coconut rice and drizzle with peanut tahini sauce.
