Ingredients

  • 2 lbs small Yukon Gold potatoes
  • 1 tsp kosher salt (for boiling)
  • 3 tbsp olive oil
  • 3 cloves fresh garlic, minced
  • 1 tbsp fresh rosemary or thyme, chopped
  • 1/2 tsp black pepper

Instructions

  1. Wash and scrub the Yukon Gold potatoes under cold water.
  2. Boil the potatoes in salted water for 15-20 minutes until fork-tender.
  3. Preheat the oven to 425°F (220°C).
  4. Drain the potatoes and let cool slightly. Place them on a greased baking sheet and gently smash each potato with the bottom of a glass.
  5. Drizzle olive oil over each potato, then sprinkle with minced garlic, herbs, salt, and black pepper.
  6. Bake for 25-30 minutes until golden brown and crispy.
