  • 1 lb elbow macaroni
  • 3 cups shredded sharp cheddar cheese
  • 1 cup shredded smoked gouda
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • ½ cup all-purpose flour
  • 1 tsp mustard powder
  • Salt and pepper to taste

Instructions

  1. Preheat your smoker or grill to 225°F (107°C).
  2. Cook elbow macaroni in salted boiling water until al dente, about 7-8 minutes. Drain without rinsing.
  3. In a saucepan, melt butter over medium heat. Whisk in flour until smooth; cook for 1 minute.
  4. Gradually add milk while whisking until thickened (about 5 minutes). Remove from heat and stir in cheddar, gouda, mustard powder, salt, and pepper.
  5. Combine cooked macaroni with cheese sauce in a mixing bowl. Adjust consistency with additional milk if needed.
  6. Transfer to an aluminum foil pan and smoke for about 60 minutes until bubbly and golden.
