Perfect for brunch or busy mornings, this easy-to-make casserole can be prepared ahead of time, allowing the flavors to meld beautifully. Serve it warm with a side of fruit or crispy bacon for an indulgent start to your day.

Ingredients

Scale
  • 4 cups fresh spinach
  • 6 large eggs
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • Salt and pepper to taste
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté the diced onion until translucent (about 5 minutes). Add spinach and cook until wilted (approximately 2 minutes).
  3. In a large bowl, whisk together eggs, milk, garlic powder, salt, and pepper.
  4. Spread the sautéed spinach mixture evenly in the prepared dish. Pour the egg mixture over it and sprinkle shredded cheddar cheese on top.
