  • 8 oz halloumi cheese
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, thinly sliced
  • 2 cups mixed greens (baby spinach or arugula)
  • 3 tbsp hot honey
  • 2 tbsp olive oil
  • Juice of 1 lemon

Instructions

  1. Preheat your grill to medium-high heat (around 400°F / 200°C) or prepare a baking sheet lined with parchment paper.
  2. Slice the halloumi into thick slabs (about half an inch) and lightly brush both sides with olive oil.
  3. Grill halloumi for 2-3 minutes on each side until golden brown and crispy.
  4. In a large bowl, combine cherry tomatoes, cucumber slices, and mixed greens. Drizzle with olive oil and lemon juice; toss gently to coat.
  5. Once grilled, drizzle hot honey over the warm halloumi slices.
  6. Assemble by layering the veggie mix in bowls and topping with hot honey-drizzled halloumi. Serve immediately.
