  • 34 medium sweet potatoes, peeled and thinly sliced
  • 1 lb ground beef or lamb
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 (14 oz) can crushed tomatoes
  • 1 cup milk
  • 1/2 cup butter
  • 1/2 cup flour
  • 1 tsp nutmeg
  • 1 cup grated Parmesan or feta cheese
  • 1 tsp oregano
  • 1 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté diced onions until translucent. Add minced garlic and ground meat; cook until browned. Stir in crushed tomatoes, oregano, and cinnamon. Simmer for about 10 minutes.
  3. Layer thin slices of sweet potato in the greased baking dish, seasoning lightly with salt and pepper between layers.
  4. Spread half of the meat sauce over the sweet potatoes. Add more sweet potato slices, then pour on the remaining meat sauce.
  5. In a saucepan, melt butter over medium heat. Whisk in flour to create a roux, then gradually add milk until thickened. Stir in nutmeg and pour over the layered moussaka.
  6. Top with grated cheese and bake for about 45 minutes or until golden brown and bubbly.
