Description

  • 8 oz rice noodles
  • 1 cup bell peppers, sliced (mixed red and yellow)
  • 1 cup cucumber, diced (preferably English cucumber)
  • 1 cup carrots, julienned
  • ½ cup fresh cilantro, chopped
  • ¼ cup creamy peanut butter
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. Cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water.
  2. While the noodles cook, chop the bell peppers, cucumber, carrots, and cilantro.
  3. In a bowl, mix peanut butter, soy sauce, lime juice, and a splash of water until smooth.
  4. In a large bowl, combine cooled noodles, chopped veggies, and peanut sauce; toss to coat evenly.
  5. Cover and chill for at least 30 minutes to let flavors meld.
