  • 1/4 cup unsalted butter (melted)
  • 1 cup cold water
  • 2 tsp active dry yeast
  • 2 tbsp sugar
  • 1 tsp salt
  • 1/2 cup dark chocolate chips
  • 1/4 cup raspberry jam (seedless)
  • 1/4 cup almond paste

Instructions

  1. Prepare the Dough: In a bowl, mix warm water with sugar and yeast; let sit until frothy (about 5 minutes). In another bowl, combine flour and salt. Gradually add melted butter and yeast mixture to form a dough.
  2. Knead: Turn out the dough onto a floured surface and knead for about 10 minutes until smooth. Place in an oiled bowl, cover with plastic wrap, and let rise in a warm place until doubled (about 1 hour).
  3. Roll Out Layers: Once risen, roll dough into a rectangle about half an inch thick. Spread softened butter over two-thirds of the surface; fold one-third over the middle and then fold over the remaining third.
  4. Chill: Wrap in plastic wrap and refrigerate for at least 30 minutes.
  5. Shape Croissants: Roll chilled dough into another rectangle; cut triangles (6 inches wide). Place desired filling at the base of each triangle and roll tightly towards the tip.
  6. Bake: Arrange on lined baking sheets; cover lightly and let rise for another 30 minutes while preheating oven to 375°F (190°C). Bake for 25 minutes until golden brown.
