- 2 large eggs (room temperature)
- 1/2 cup whole milk
- 1 cup all-purpose flour (sifted)
- 2 tbsp granulated sugar
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 tbsp melted butter (for greasing)
Instructions
- Separate the egg whites and yolks into two bowls. Whip the egg whites until stiff peaks form.
- In the bowl with egg yolks, whisk together milk, vanilla extract, sugar, and melted butter. Gently fold in the sifted flour and baking powder until combined.
- Carefully fold the whipped egg whites into the batter in three parts, preserving as much air as possible.
- Heat a non-stick skillet over low heat and grease lightly with butter. Spoon dollops of batter onto the skillet.
- Cover and cook for about 4 minutes until bubbles form on top. Flip gently and cook for another 3 minutes until golden brown.
- Serve stacked high with your favorite toppings.
