Ingredients

  • 2 cans (15 oz each) canned chickpeas, drained
  • 1 cup fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1 tsp cumin powder
  • 1/2 cup flour (all-purpose or chickpea)
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp olive oil

Instructions

  1. Rinse and dry the canned chickpeas.
  2. In a food processor, combine chickpeas, parsley, garlic, cumin, flour, salt, and pepper. Blend until a thick paste forms.
  3. Preheat your waffle iron and spray it with nonstick cooking spray.
  4. Scoop about half a cup of falafel mixture onto the waffle iron and cook for approximately five minutes until golden brown.
  5. While cooking, mix Greek yogurt with lemon juice and olive oil in a bowl.
  6. Serve waffle falafels hot with the sauce drizzled on top.
