  • 2 tbsp honey or maple syrup (to taste)
  • 1 tbsp fresh lime juice
  • Popsicle molds

Instructions

  1. Blend the watermelon in a blender until smooth.
  2. In a separate bowl, whisk together the coconut milk, honey (or maple syrup), and lime juice until well combined.
  3. Layer the mixtures in popsicle molds: start with watermelon puree, then add a layer of the coconut mixture, repeating until molds are filled.
  4. Insert popsicle sticks and freeze for at least 6 hours or until solid.
  5. To serve, run warm water over the outside of the molds to help release the pops.
