Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 cup cucumber, diced (preferably English)
  • 1 cup red bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup fresh basil or mint leaves
  • 1 small jalapeño, seeded and diced (optional)
  • Salt and pepper to taste

Instructions

  1. Chop the watermelon, cucumber, red bell pepper, red onion, jalapeño (if using), and fresh herbs into manageable pieces.
