Ingredients

  • 1 large chicken breast fillet (about 300g)
  • 4 slices ham
  • 4 slices Swiss cheese
  • 50 g plain flour (1/3 cup)
  • 1 medium egg
  • 25 g panko breadcrumbs (1/2 cup)
  • 2 small bunches cherry truss tomatoes (about 5 on each)
  • steamed green beans to serve
  • garlic herb butter to serve

Equipment

  • Air Fryer
  • rolling pin
  • Bowls
  • Plates

Method

  1. Cut the chicken in half horizontally. Place 1 chicken piece on plastic wrap and use a rolling pin to beat it evenly until 1cm thick. Unwrap and top with 2 slices of ham and 2 slices of cheese. Roll up chicken firmly from a short end. Repeat to make second roll.
  2. Place the flour in a shallow bowl. Whisk the egg in a separate bowl. Place breadcrumbs on a plate. Coat 1 chicken roll in flour, shake off excess, then dip in egg and coat with breadcrumbs. Repeat with remaining roll.
  3. Spray chicken rolls with olive oil and place in the air fryer basket. Cook at 180°C for 7 minutes. Add tomatoes to the basket; cook for another 8 minutes until chicken is cooked through and tomatoes are soft.
  4. Divide the chicken and tomatoes between plates. Serve with green beans topped in garlic and herb butter.
