  • 2 cups almond flour
  • 1/2 cup cocoa powder unsweetened
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup honey or maple syrup for vegan option
  • 1/4 cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 1 large egg
Add-ins
  • 1 cup dark chocolate chips dairy-free if desired

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the almond flour, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the honey, melted coconut oil, vanilla extract, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the dark chocolate chips.
Baking
  1. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  3. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
