Ingredients
  

Lamb Roast
  • 2 pounds boneless lamb roast preferably leg or shoulder
  • 2 tablespoons olive oil for searing
  • 4 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 cup chicken broth for basting

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, mix together olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  3. Rub the mixture all over the lamb roast, ensuring it's well coated.
Cooking
  1. Heat a roasting pan over medium-high heat and sear the lamb roast on all sides until browned, about 5-7 minutes.
  2. Transfer the lamb roast to the oven and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  3. Baste the roast with chicken broth every 30 minutes to keep it moist.
  4. Remove the roast from the oven and let it rest for 15 minutes before slicing.
