Ingredients

  • 3/4 cup crisp, sweet apple, cut into small bite-size pieces
Spices & Sweeteners
  • 3/4 tsp ground cinnamon
  • 1 Tbsp maple syrup for cooking apples
  • 1/2 1/2 - 1 Tbsp maple syrup for oat mixture
  • 1/2 tsp ground cinnamon for oat mixture
  • 1 pinch sea salt
Liquids
  • 3/4 cup unsweetened plain almond milk
  • 1 tsp vanilla extract
Seeds & Nuts
  • 1 Tbsp chia seeds
  • 2 Tbsp creamy unsalted cashew or almond butter
Grains
  • 1/2 cup rolled oats

Method
 

Cooking Process
  1. In a small saucepan, add chopped apples, cinnamon, maple syrup, and salt. Mix to distribute cinnamon evenly. Cook on low heat, covered, for about 10 minutes until apples are soft. Remove the lid, increase heat to medium, and cook for another 2-3 minutes, stirring constantly to evaporate juices and create syrup. Turn off heat and set aside.
  2. In a bowl or measuring cup, mix almond milk, chia seeds, maple syrup, cinnamon, nut butter, and vanilla. Stir in oats until well-combined.
  3. In two small mason jars or bowls, layer the cooked apple mixture, then half the oat mixture, and top with remaining apples. Refrigerate overnight or for at least 6 hours.
