- In a small saucepan, add chopped apples, cinnamon, maple syrup, and salt. Mix to distribute cinnamon evenly. Cook on low heat, covered, for about 10 minutes until apples are soft. Remove the lid, increase heat to medium, and cook for another 2-3 minutes, stirring constantly to evaporate juices and create syrup. Turn off heat and set aside.
- In a bowl or measuring cup, mix almond milk, chia seeds, maple syrup, cinnamon, nut butter, and vanilla. Stir in oats until well-combined.
- In two small mason jars or bowls, layer the cooked apple mixture, then half the oat mixture, and top with remaining apples. Refrigerate overnight or for at least 6 hours.
