Ingredients
  

Muffin Ingredients
  • ½ cup unsalted butter (113g)
  • ¾ cup light brown sugar packed (150g)
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp instant coffee mixed with 1 tsp hot water (optional)
  • 3 large extra ripe bananas (mashed, about 400g)
  • ½ cup sour cream (120g) or Greek yogurt
  • 1 ¾ cups all purpose flour (227g)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup chocolate chips (200g, chunks or chopped chocolate of choice)
Chocolate Ganache
  • ½ cup dark or semi-sweet chocolate chips (100g)
  • cup heavy cream (80g)

Method
 

Muffin Preparation
  1. Pre-heat oven to 375F and line a jumbo muffin tray with parchment paper or muffin liners.
  2. Melt the butter in a nonstick saucepan over medium-low heat until it turns brown and fragrant.
  3. Add the brown butter to a bowl along with the brown sugar and whisk for 1-2 minutes.
  4. Wait 3-5 minutes for the mixture to cool slightly, then add the eggs, vanilla, and instant coffee mixed with hot water. Whisk until smooth.
  5. Add the mashed bananas and sour cream, whisk until combined.
  6. Sift in the flour, baking powder, baking soda, and salt, then gently fold until just combined.
  7. Fold in the chocolate chips.
  8. Divide the batter evenly between the muffin cups and top with more chocolate chips if desired.
  9. Bake for approximately 27-30 minutes until a toothpick inserted comes out with light, moist crumbs.
Ganache Preparation
  1. While the muffins bake, prepare the ganache by heating the cream until it just starts to boil, then pouring it over the chocolate in a bowl. Cover and let sit for 5 minutes, then stir until smooth.
  2. Let the ganache cool to thicken, then fill each muffin with ganache using a piping bag.
